- Frosted Pineapple Cookies -
These don't sound like these would be the greatest, but they are actually quite good!
1 can (18 oz.) crushed pineapples
1/2 cup shortening
1 cup packed brown sugar
1 tsp. vanilla
2 cups flour
1-1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1-1/2 cup confectioners sugar
1. Drain the pineapples, reserving 3 Tbsp juice. Set pineapple aside; set juice aside for frosting. In a mixing bowl, cream shortening and brown sugar until light and fluffy. Beat in egg. Add pineapple and vanilla; mix well. Combine the flour, baking powder, baking soda, and salt; gradually add to the creamed mixture.
2. Drop by tablespoons 2 in. apart onto greased baking sheets. Remove to wire racks to cool.
3. For frosting, in a bowl, combine confectioners sugar with enough of the reserved pineapple juice to achieve spreading consistency. Frost cool cookies. Enjoy!
