- Lime Cheesecake Bars -
These... are awesome! We absolutely love 'em!
1 1/4 cups flour
1/3 cup sugar
7 Tbsp. butter, softened
1 egg yolk, beaten
1/3 cup flaked coconut
16 oz. cream cheese
14 oz. sweetened condensed milk
2 eggs
1/2 cup lime juice
Preheat oven to 400 degrees. Combine flour & sugar; add butter & egg yolk; mix until combined; mix in coconut. Press into a greased 9 x 13 glass dish. Bake 12 to 14 min. until edge of crust is golden brown. Reduce oven to 350 degrees. With mixer, beat cream cheese until fluffy. Beat in sweetened condensed milk until smooth. Add eggs; mix until just combined. Stir in lime juice. Pour batter over crust. Once oven has cooled to 350 degrees, bake 17 - 22 min. or until center is set. Cool. Cover and chill for 2 hours. Refrigerate. Enjoy!

They taste GREAT with lime... so they would probably taste GREAT with lemon juice too!

I was about to kind of "skip over" that post until I saw it was cheese cake! I LOVE cheese cake! That recipe sounds yummy! :-D
